S’mores Puppy Chow

Don’t you hate it when you have a whole blog post written and nearly done and you shut your computer WITHOUT SAVING IT and the next day, BAM!, it’s not there?!  Yeah, me too.  Sooooo, without further adieu, we’re just going to get right to this recipe!  S’mores are everywhere right now because camping is the thing to do (at least in Missouri) and you obviously can’t camp without making s’mores!  But if you’re anything like me and hate to camp but still love s’mores and can’t legally/safely build a bonfire in your backyard, this S’mores Puppy Chow is THE PERFECT thing to make.  It combines the crunchy, addictive goodness of puppy chow with all the decadent components of s’mores.  And it is impossible to keep your hands out of it.  Trust me, I know.  This would be perfect for any July 4th party (yeah, already time to make that menu!)…s’mores without the work and mess but all the flavor!

S'mores Puppy Chow
 
Ingredients
  • 1 c. Smooth Peanut Butter
  • ½ c. Butter
  • 2 c. Semi-Sweet Chocolate Chips
  • 1 T. Pure Vanilla Extract
  • 9 c. Rice Chex
  • 2 c. Brownie Mix
  • 4 c. Powdered Sugar
  • 4 c. Golden Graham Cereal
  • 4 c. Mini Marshmallows
  • 2 c. each Semi-Sweet and Bittersweet Chocolate Chips
Instructions
  1. Place the Rice Chex, 2 cups of the Golden Grahams and 2 cups of the mini marshmallows in a large bowl. Set aside.
  2. In a microwave safe bowl, melt the peanut butter, butter and chocolate chips at 20-second intervals in the microwave, stirring between each until completely melted and smooth. Stir in the vanilla.
  3. Pour the chocolate/peanut butter mixture over the cereal and marshmallow mixture and stir gently until everything is evenly coated.
  4. Place the brownie mix and powdered sugar in a large paper bag. Add the chocolate/peanut butter/cereal/marshmallow mixture to the bag. Shake vigorously to evenly coat everything with the powdered sugar and brownie mix.
  5. Spread the remaining 2 cups of Golden Grahams out in a single layer on two large, foil-lined baking sheets. Melt 1 cup of the semi-sweet chocolate chips and 1 cup of the bittersweet chocolate chips in a medium bowl in a microwave at 20-second intervals, stirring between each until completely melted and smooth. Drizzle over the Golden Grahams and let the chocolate dry completely.
  6. Place the puppy chow in a large bowl and add remaining 2 cups of the Golden Grahams with the chocolate drizzle, remaining 2 cups mini marshmallows and remaining 1 cup semi-sweet chocolate chips and 1 cup bittersweet chocolate chips. Stir everything together. Eat!
Notes
Makes ???? servings. A LOT. Enough for at least 25 people.

Hey friends!  Man, I feel like I’ve barely recovered from all the Christmas baking and New Year’s Eve is staring me right in the face!  Ack!  I’m not gonna lie, at this point I’m not sure what I’m going to bake, if anything, and quite truthfully these no-bake dessert dips are looking pretty good to me right now.  Very short list of ingredients, no oven involved and just darn tasty.  So this is the direction I think I’m gonna go…because I actually want to enjoy my New Year’s and not drive myself crazy the next couple of days baking non-stop in the kitchen.  Just keepin’ it real people!

Chocolate S’mores Muffins

 

I am so, so, SO excited to introduce the very first fall recipe for 2012 on Desserted Planet–Chocolate S’mores Muffins!!  Yes, I know it’s still August but here in Missouri the temperatures have drastically plunged and we’ve been seeing highs in the 70’s and low 80’s and people are more than ready to break out their scarves and throw some chili on the stove.  Bring on fall!  If only winter didn’t come after it…oh well.

Anyways, back to these amazing muffins.  A couple of weeks ago Jeremy and I went camping with some other couples and all their cute kiddos.  Anyone who knows me, knows that I am not a fan of camping.  I didn’t grow  up camping so I think that is part of the problem.  I just don’t see how people enjoy being dirty and sweaty and sleeping on the ground and doing their business behind a tree…I honestly just don’t get it!  However, this camping trip was a little different so I wasn’t quite a reluctant to go…but reluctant nonetheless.  Everyone had a camper, including Jeremy’s brother and his wife so we had somewhere to sleep that was not that ground and it was even air-conditioned!  It also meant we had a bathroom.  Ok, I could do that.

So after agreeing to go, I began to think about what we should bring to eat.  Since we’d only be there overnight and the next morning, I wanted something sweet and appropriate for breakfast.  Of course!  S’mores!  In muffins!  Brilliant.  And yes, the recipes were already out there.  Like this one from Elle’s New England Kitchen.  It was pretty much a perfect recipe as is, but not very sweet so I added a bit of extra sugar and doubled the recipe, as the original stated that it only made twelve.  They were a BIG hit and pretty much like eating a chocolatey, marshmallow studded cupcake for breakfast.  Yes, cupcake.  But we didn’t call them that…they are MUFFINS.  And that makes them totally appropriate for breakfast.  But if you want to eat one for dessert, that’d be ok too…

Chocolate S'mores Muffins
 
Ingredients
  • 3 c. All-Purpose Flour
  • 1 c. Unsweetened Cocoa Powder
  • 2 T. Baking Powder
  • ½ t. Salt
  • 1 c. Brown Sugar
  • ½ c. Granulated Sugar
  • 4 Large Eggs
  • 2 c. Whole Milk
  • 1 c. Vegetable Oil
  • 2 T. Pure Vanilla Extract
  • 2 c. Dark Chocolate Chips, divided
  • 3-4 c. Mini Marshmallows
  • 12 Whole Graham Cracker Sheets, broken into chunks but not too small (for a total of 3 cups graham cracker pieces, with one cup reserved for topping muffins)
Instructions
  1. Preheat oven to 350 degrees. Lightly grease 32 muffin cups in a muffin pan.
  2. In a large bowl whisk together flour, cocoa powder, salt and both sugars. In a medium bowl whisk together the eggs, milk, oil and vanilla. Stir the wet mixture into the dry and gently fold until everything is incorporated. Fold in 1 cup chocolate chips, 2 cups mini marshmallows and 2 cups graham cracker pieces.
  3. Divide the mixture evenly between the muffin cups. Top each muffin with the remaining chocolate chips, marshmallows and graham crackers. Bake for 18 minutes or until a toothpick inserted comes out clean.
  4. After baking, cool on a wire rack for about 5 minutes and then run a knife around the edges, remove the muffins from the pan and continue cooling completely on the rack. Or eat warm!
Notes
VERY IMPORTANT: You MUST remove the muffins from the pan after 5 minutes or they will NOT come out. Also, muffin liners will NOT work with these muffins--they will stick to the liners and be a mess.

New Year’s Eve Party Mini Desserts

I have been in love with mini desserts for years.  They are just so darn cute and the fact that you don’t have to pick just ONE dessert but can in fact try several, due to their tiny size, is just awesome to me.  I love them so much that I actually used to cater desserts and only did miniature sizes.  It was so much fun and sometimes I really miss planning dessert tables for weddings or parties with loads of colorful, bite-size desserts!  Thank goodness for the holidays when I can unleash my creative baking skills (obsession?) on all my family and friends!

So, I thought what would be better for a New Year’s Eve party than mini sweets?!  Finger foods are VERY popular for New Year’s Eve parties and these desserts stay right with that theme.  Some of these are super easy (2-3 ingredients), which is great since you have no doubt been in the kitchen waaaayyyy too much between Thanksgiving and Christmas.  Also, another way to make easy miniatures is to bake up a normal 9×13 pan of brownies, blondies, cake, etc. and cut them small with a knife or fun-shaped, small cookie cutters or take any regular ‘ole cookie recipe and just make smaller than normal cookies (be sure to cook them for less time!).  Ok, let’s check out some other awesome tiny goodies from around the blogosphere:

I LOVE baklava.  Love it.  It was the one thing I was looking most forward to indulging in over the Christmas holiday. I’ve actually made Baklava Cups before and they are super good and MUCH less labor intensive than the traditional way.  See more ideas from Women’s Day here.

Mini Ice Cream Cookie Pops. How fun!  However, if you’re afraid of the ice cream melting before people can scarf them down, try it with buttercream frosting.

These Lindt Mini Chocolate Trifles are adorable.  Use some larger shot glasses for the cups and think about switching up ingredients…caramel sauce for the fudge, brownies for the cookies, etc.

I have been making Brownie Tassies forever.  The only thing I do differently is top them with coffee buttercream and toasted, slivered almonds.  People will go nuts over these.

Ummm, excuse me but this Chocolate Covered Bacon Caramel Popcorn is dangerous.  Dangerous I tell you!!  And I am SO going to make it.

These Mini Cherry Pies are just down right pretty.  And begging to be eaten.

I love the playfulness of this Gumdrop Fudge.  Very festive and party appropriate.  Not to mention easy.  We like easy!

My Favorite Season

I know everyone is getting really excited about the colder temps and winter-like weather that is happening right now, but we have PLENTY of fall left and I’m going to savor every last minute of it.  Here are a few things I love at this time of the year (and some ah-mazing pumpkin recipes).

Fall Leaves.  Can’t get enough of the beautiful colors.  And it’s even better this year since this is the first fall in our new house and we have two gorgeous trees in our front yard. (and no, these are not our trees!  I wish!)

Pumpkin Monkey Bread.  I do believe I could eat this EVERY SINGLE morning for breakfast.  I won’t!  But I could.

Fall-Scented Candles.   According to this blog, Bath and Body Works has a Bakeshop candle collection.  Sad to say I haven’t been to the mall in so long, I have no idea if this is true or not!  Shopping trip!

Andy’s Frozen Custard Pumpkin Pie Concrete.  I think this is my favorite concrete concoction from Andy’s (besides my husband’s brilliant combination of cherry juice, Oreos and brownie mmmmm).  Unfortunately, I couldn’t find a good photo which I suppose means one thing:  I’ll have to go get a Pumpkin Pie Concrete and take my own photo.  The things I do…

Peanut Butter Cup S’more Bars

After seeing all the awesome recipes last week in honor of National S’mores Day, I was inspired to make my own variation of the classic campfire treat.  But what to do?  There are so many creative recipes out there!  I finally decided I wanted it in bar form and peanut butter was going to be incorporated one way or the other.

So, I found this recipe from Taste of Home that had great reviews.  And I now know why!  These might actually be one of my favorite things I’ve made thus far and I think it’s the marshmallow creme that really does it for me.  I absolutely abhor store bought marshmallows but marshmallow creme…that’s a different story.  I might have at one time or another sat down with a jar of peanut butter, a jar of marshmallow creme, a spoon and….well…you can imagine what happened next.  Not pretty.  Needless to say, this is a little more dignified way to eat all of those yummy ingredients.

Peanut Butter Cup S'mores Bars

Ingredients
  • 1 c. (2 sticks) Unsalted Butter, softened
  • 1½ c. Packed Brown Sugar
  • 2 Large Eggs
  • 1 T. Pure Vanilla Extract
  • 2⅔ c. AP Flour
  • 1½ c. Graham Cracker Crumbs
  • 2 t. Baking Powder
  • ¼ t. Salt
  • 35 Regular Size Reese's Peanut Butter Cups
  • 1 (13 oz) Jar Marshmallow Cream
Instructions
  1. Preheat oven to 350 degrees and grease a 9x13 baking pan.
  2. In an electric mixer, cream butter and sugar until light and fluffy. Beat in eggs, one at a time and then the vanilla. In a medium bowl, combine the flour, graham cracker crumbs, baking powder and salt. Gradually add to the creamed mixture. Set aside 1 cup for topping.
  3. Press remaining mixture into the 9x13 baking pan. Place peanut butter cups wide side down on the crust. Spray a large spoon with cooking spray and spread the marshmallow creme gently onto the peanut butter cups. Crumble the remaining graham cracker mixture over top.
  4. Bake at 350 degrees for 40-45 minutes or until golden brown (mine were a little dark around the edges at 45 minutes). Cool on a wire rack and store in an air-tight container.
